Maybe My Last Summer Vegetable Pasta


I had some summer squash and zucchini from the farmers market and wanted to throw together a nice light pasta. I also had a half open bottle of reisling and an open carton of vegetable broth in the fridge. I grabbed these, an onion, a couple cloves of garlic, some grape tomatoes, and olive oil.

I sliced up the squash and onions and sauteed them in the olive oil, then added the garlic (minced). I like my squash and onions on the soft side so I left them sauteeing for a while before I added some wine and vegetable broth. As this was all simmering and the flavors were mingling, I put a pot of water on the stove for pasta. Once the pasta was about done, I halved the tomatoes and threw those into the squash mixture. Then I tossed the whole thing with the pasta and a little bit of pasta water. I wish I could give you measurements, but at the time I was just throwing things together, not really thinking about what I might end up with. But in the end what I had was a slightly sweet mixture of fresh veggies and pasta, and sprinkled with a little salt and pepper, it made the perfect dinner.
