Ginger-Soy-Glazed Wings
Tomorrow is Super Bowl Sunday! I hope you're all planning on rooting for the Patriots! And I hope you're all planning your menus. You really can't have a Super Bowl party without wings, so here's a great recipe for some crispy wings with a sweet-savory ginger-soy glaze. I loved how the wings were super moist but still had crisp skin.
Ginger-Soy Glazed Wings (adapted from Bon Appetit, February 2012)
Ingredients
2 pounds chicken wings and drumettes
1 tablespoon vegetable oil
1/2 teaspoon kosher salt
1/4 teaspoon pepper
1/4 cup honey
2 tablespoons soy sauce
3 garlic cloves, crushed and peeled
1 1-inch piece ginger, peeled and sliced
Preparation
Preheat oven to 400 degrees. Line a large rimmed baking sheet with foil and place a wire rack in the pan.
Toss chicken wings, oil, salt, and pepper together in large bowl.
Spread wings out on prepared rack in single layer.
Bake until wings are cooked through and skin is crispy, 45 to 50 minutes, turning pan halfway through.
Meanwhile, combine honey, soy sauce, garlic, and ginger in small saucepan.
Bring mixture to a boil, stirring to dissolve honey, then reduce heat to low and simmer until reduced to 1/4 cup, 8 to 10 minutes. Strain mixture into liquid measuring cup, and let sit for about 15 minutes to thicken.
Transfer wings to large bowl, and pour glaze over wings.
Toss gently with tongs to coat wings. Return wings to rack and lay out in single layer.
Return pan to oven, and cook wings for 8 to 10 minutes longer, until glaze is glossy and caramelized.
Serve hot.
