Peppermint Meringue Cake With Chocolate Buttercream


We had another fun holiday party to attend this past weekend, and I decided to make a cake I couldn't get out of my head since I first saw it gracing the December 2009 cover of Bon Appetit: peppermint meringue cake with chocolate buttercream.


Layers of light, crisp but chewy peppermint meringue alternate with moist peppermint syrup-soaked chocolate cake and dark chocolate buttercream.


It reminds me of stirring a candy cane into hot chocolate with marshmallows, one of my favorite things during winter and the holidays. And it might just be the best cake I've made all year.


Topped with After Eights, bright red raspberries, and sprigs of green mint, it's incredibly festive and the perfect dessert for any holiday gathering.

I'm making that cake tomorrow! Was it easy - or are there any issues I should be aware of?

Megan - It's pretty straightforward. I actually made my meringue the day before and stored it in a plastic container. Then I made the buttercream the next night and left it to set up while I made the cake. Definitely use lots of peppermint syrup to get the cake layers nice and moist. And then to decorate with the mints on top, make sure you do it when the buttercream is soft. My cake had been in the fridge overnight, and I left it out an hour before trying to decorate, and the buttercream was still a little hard.

Oh, I found someone who made this delicious looking cake I saw on Bon Appetit! Yours looks awesome! Definitly a challenging recipe with the different parts but I'm sure worth every minute of the work! Merry Christmas!

If I were not so cookie baked out I would honestly think about making this tomorrow! I am in a peppermint stage right now and this looks beautiful and sounds like it tastes great. Your final product is beautiful!

chocolate and peppermint--this time of year knows no better combination. what an outstanding cake, megan! the pink filling is just beautiful, and the very thought of peppermint-syrup-soaked ANYTHING sends my saliva glands into overdrive! :)
