Individual Plum Crisps

My mom came to the farmers' market with me two weekends ago (before wedding dress shopping), and she ended up buying a container of small plums in addition to a bunch of other farmers' market goodies.

She left some of the plums with me, and I thought I'd make a simple summer dessert with them. These individual plum crisps, with subtle hints of cinnamon, are sweet and tart, preserving the flavor of the plums.

Individual Plum Crisps (my recipe, topping adapted from The Art and Soul of Baking)
Printable version
Serves 2

Ingredients

1/4 cup flour
1/4 cup old-fashioned oats
1/4 cup light brown sugar
1/4 teaspoon cinnamon
1/8 teaspoon salt
4 tablespoons cold unsalted butter, cut in small chunks
4 small plums
Vanilla ice cream or whipped cream for serving, optional

Preparation

Preheat oven to 350 degrees.

Whisk together flour, oats, brown sugar, cinnamon, and salt in a medium bowl. Using a pastry blender or your fingers, cut in the butter until it is evenly distributed and topping starts to clump together.

Dice the plums, and divide them between two small oven-safe dishes.

Sprinkle half of the topping over each dish (do not pack it down).

Place the baking dishes on a sheet pan, and bake for 20 minutes, or until fruit is bubbling and crisp turns golden brown, turning the pan halfway through baking.

Let cool slightly before serving. Serve with vanilla ice cream or whipped cream, if desired.

What simple summer desserts have you been enjoying?

my simple summer desserts are indeed simple - ice cream sundaes, gelato, nothing I have to bake myself. these look better though!

That topping mixed with the bright fruit looks heavenly. Most summer fruits I'm content to eat by the bowlful as is because they're all so short lived. Plums I'm not as crazy about raw but I LOVE them in baked goods. If you're ever looking to bake with plums again, this cake my mom makes is delicious,

What a great way to use up some plums. We got a bunch of mini plums in our CSA last week and we've just been snacking on them. If we get more, I'm def going to have to make this recipe.

I'm not a huge plum fan but would love these with other fruits. I have been enjoying nectarines all by themselves.

I love this recipe! I picked up some the other day, and made plum upside-down cake. Plums are so delicious when used in a dessert:-)
Take care,

That topping is mouth watering! I just made an appetizer with plums but they could certainly be enjoyed as a dessert too!

I bought some plums recently that turned out to be pretty sour so I'm a little down on my plums right now :p Those individual baking dishes are sooo cute!

Such a great looking dessert that really is something to enjoy during the summer months (not too much baking/oven time!) Great dishes:)

These are adorable! I can't believe I haven't had a single plum this whole summer. That needs to change.

Fruit crisps are really great with stone-fruits. Love the color of the plums! I'm glad your mom shared some with you so you were able to indulge in this dessert :)

Delicious doesn't even begin to describe how this looks! I've been going crazy making all different ice cream flavors this summer. But the simplest - rainier cherries, right out of the fridge :)

mmm, crisps are awesome, and individual sizes make everything better, of course :)
